Coconut Ginger Candy

  • 1 Coconut

  • 1/2 Cup Ginger sliced in 2" thin rounds

  • 2 Cups Sugar

  • 3 Cups Water


Remove flesh from coconut and slice into strips. For more chewy candy, slice strips a little more than 1/4" thick. In a non-stick, pan combine all ingredients and bring to a boil. Reduce heat and let simmer until all water evaporates, stirring frequently (this could take up to 2 hours). Pour hot ingredients onto a cookie sheet lined with silicon baking liner. Cut into pieces when cooled.
